GARY & GRACIELA - OWNERS

Recently back from living and working in Australia, it's a privilege to come home to such a quality operation where the standards are already so high. As a couple we have a strong background in award winning food and drink operations, having run the Puffing Billy in Exton and The White Hart Hotel on Dartmoor. We love making people happy...... hospitality is definitely in the blood.

We plan to keep running the pub in the way that people have come to love - the fabric of the business isn't going to change and with Ian still heading up the kitchen, the food won't be changing either. So the only difference you're really going to notice are just the two new faces behind the bar!

CALLUM BURKS - SOUS CHEF

Growing up I was interested in food from a young age. Whenever I would visit my Grandparents I would be in the kitchen with my Nan making crumbles amongst other things - infact these are some of my earliest memories. When I was able to do so I attended Exeter College and gained my levels 2 and 3 in professional cookery.

During my time at College I worked as many hours as I could in kitchens, landing myself my first chefs job at Michael's restaurant in Exmouth. I took some time out of working in Exmouth and spent a winter in the French Alps cooking in a small chalet and snowboarding in my free time. I returned to Exmouth and Michael’s to finish the summer and then received a job offer from Paul Ainsworth at Number 6 in Padstow. I worked there until early 2014 when the opportunity arose to join The Five Bells as Chef de Partie and work under Head Chef Ian Webber. It’s been just over two years now and i’m learning more and more every day!

IAN WEBBER - HEAD CHEF

Previously Head Chef at the two Michelin starred Gidleigh Park at Chagford for 6 years and a former winner of Taste of the West's ‘South West Chef of the Year’ competition in 2006, I was also Executive Head Chef of Abode Exeter for a year before joining the Five Bells in November 2013.

I live in Honiton and am a father of three. Joining the team here was a brilliant opportunity to balance family life with work and approach cooking from a slightly different and more hands on perspective. My motivation now is to produce delicious, simple, seasonal dishes and pub favourites with a stylish twist.

I really want to keep doing things for the villagers and reward their loyalty as they were responsible for saving the pub in the first place. It’s very empowering to have the chance to help to extend the reach of good food and good hospitality to a wider audience. In terms of quality local ingredients we have everything we could possibly want right on our doorstep.
